  1. Carrot Pineapple Cake

    I saw this on Barefoot Contessa one evening while sweating my ass off at the gym and decided right then and there that I needed to make this cake. Since I had a very special birthday to celebrate that weekend in New Jersey (my paternal grandmother, who I love very much), I figured that was the perfect occasion.

    I baked the cake the night before, let it cool, iced it, placed the pineapple on top, and then packed it in a carrying case. It survived the night and a 5 hour drive to Jersey, thankfully, where I promptly sliced it up and passed pieces around.

    I'll get right to the point: this cake is fucking tasty and you need to make it. The fresh pineapple lends an incredible sweetness and just a hint of tartness to the otherwise rich, cinnamon carrot cake. The texture is incredibly light and soft, and the icing... mmm. The pieces of fresh pineapple on top also create a delicious contrast to the cream cheese icing, too.

    But don't take my word for it - here's the recipe (I omitted the walnuts, and bumped up the cinnamon to 2 1/2 teaspoons).

      Dayummm. If I wasn't trying to drop about 20 pounds I'd jump all over that. Pineapple on anything fuggin' rocks my world.

      It's full of carrots and pineapple, for christ's sake! It's practically GOOD for you! ;)

      In all seriousness, I ate a whole lot of this cake and didn't put on a single pound. In fact I lost a few. My advice? Eat whatever you want, and just exercise for an hour every day. That's much more fun.

      I just renewed my gym membership so I have no more excuses. Finding that hour is still a bitch, though.

      Absolutely... but I go to the one in Petersburg... one hour a day, six days a week. You down?

      I've been going for two months and I'm doing so much better now. You should totally come... because it rocks. And also because I need someone to restrain me (one day, when I don't care if I'm allowed back in there or not, some dumbass little bitch is liable to get her fingers broken and her mouth beat in). :D

      damnit girl why do ya gotta go to the one in petersburg??? GRRRRR but i might have to look into the drive to petersburg

      Well, mostly because it's bigger and better than the Wellness Center in Moorefield, and also because they have a personal trainer there that you can use for free whenever you want - at the Wellness Center you have to pay like $20 an hour for personal training. Plus they're super nice, and it's actually less out of my way than the Wellness Center.

      Basically it works out better for me in like every possible respect. It's only 12 miles, you can do it... I know you can. :D
